80 psi is way too low. Should be more like 140 to 160. Could be the rings are stuck if it has been sitting a long time.

Pits cause wear, but smoothing them out recontours the cam surface and can impact function. As long as there are no sharp edges, I would put a dab of grease and let them be.

Stator winding isn't really difficult, but guys who do it usually build a winding jig first to get the winds tight and even. The other details are wire gauge and length. Stator wire is available on the internet.
